A 4 million year old fossil. A 3D map of New York. A 4 million year old fossil. A 3D map of New York. An uni shell capturing the California coast.

Every course arrived in its own miniature world, with custom ceramics and sculptural serving pieces that extend the story beyond the food itself.

Hidden inside Tasting House Los Gatos is Vicinity, an intimate 13-course tasting menu experience. And it’s already earned a spot in the Michelin guide.

Much of Chef Julian Silvera’s menu is a celebration of California’s coastlines and forests.

An abalone bite arrives atop a 4 million year old fossil discovered by the team during a hike near Santa Cruz.

“Pillar Point” showcases the California coast with squid, uni, mussel, and seaweed nestled inside an urchin shell.

The menu then journeys to chef’s New York roots with a cheesy breakfast bite, served on a 3D map of his childhood neighborhood.

Another memorable course was created by the restaurant’s Filipino team members, with squab liver lumpia and adobo squab.
 
The international wine pairing was equally thoughtful and beautifully matched.

My only complaint? It’s a bit of a drive from San Francisco. But for a meal like this, the journey is part of the experience.
