This was the best thing I ate on my last trip to T This was the best thing I ate on my last trip to Taipei. It’s a scallion pancake, but it’s not like the more common Chinese versions. It’s extra flaky, puffy, and with pull-apart layers.

Tian Jin is the place to get it. Don’t be daunted by the line, it moves quickly. You can choose from eight flavors, and they were cool about add-ons.

I got a sweet corn, cheese, and egg pancake for only $2 USD (NT$60). The sweet and savory was so good, especially with the thick soy-based sauce they drizzle on.

Next time, I would add basil and hot sauce to any of them. Thank me later.

From the Michelin-starred chef of Osito is Chicken Fried Palace. A diner inspired by his Texas roots, with a Bay Area twist.

You choose your chicken-fried protein and sauce. The Bay sauce is my pick. Basil and oyster sauce, inspired by Taiwanese fried eggplant. Insanely good on chicken.

Other hits include a blooming onion with chili crisp, savory-sweet salt cod pancakes with pimento cheese, and melted greens.

And it’s not a diner without dessert. They got classics like banana pudding and buttermilk-lemon meringue pie.

Proceed with joy and zero restraint.
